Carrot and Walnut Cake
 
This is taken from 'Patrick Holford's Low GL Diet Cookbook' and is a great example of how a delicious cake can be made without using sugar, wheat or dairy!

Serves 8

Ingredients
 
4 oz softened coconut oil
4 oz xylitol (low gl fruit sugar)
4 oz organic soya flour
½ tsp baking powder (wheat free)
4 oz ground walnuts (grind in a food processor)
4 oz chopped walnuts
2 medium carrots scrubbed or peeled and grated
4 medium eggs

Method
 
Heat the oven to 180 electric or gas mark 4.
Prepare a 8 inch square cake tin - oil and line with grease proof paper.
Cream the xylitol and coconut oil together in a bowl.
Stir in the soya flour, baking powder and the ground walnuts nuts until it looks like breadcrumbs.
Then add the chopped walnuts and grated carrots and stir in the eggs.
Pour into the tin and smooth.
Bake for approx 1 hour checking towards the end of cooking time. Let it cool and then turn out onto a wire rack.
 
For a special treat if you can take dairy mix 4 oz low fat cream cheese with 2 tsp xytitol and 1 tsp vanilla essence and spread on the cooled cake and dot with chopped walnuts.
